acid that occurs naturally in citrus fruits. It is widely used as a food
additive for its sour taste and as a preservative due to its antimicrobial

gelling agent, coloring agent, etc.
Application
1 Beverages: It is a common acidulant in soft drinks, juices, and sports drinks to provide tartness and improve flavor.
2. Canned Foods: Used to control pH levels and prevent botulism by creating an acidic environment unfavorable to Clostridium botulinum growth.
3. Dairy Products: In dairy-based beverages and desserts, it enhances tartness and acts as a natural preservative.
4. Meat Products: As an emulsifying agent, it helps in the processing of meats like ham, sausages, and salami.
5. Confectionery: In candies and chewing gums, it provides sour taste and acts as a flavor enhancer.
